2 cups flour
3/4 cup sugar
3/4 tsp baking soda
1/2 tsp salt
1 1/2 cups mashed banana
1/4 cup yogurt
2 eggs beaten
6 tbsp butter melted
1 tsp vanilla extract
1 cup macadamia nuts chopped
Set oven to 350 F. Grease bread pan.
Toast coconut and macadamia nuts.
Combine first 5 ingredients in bowl, set aside.
Mix banana, yogurt, eggs, butter, and vanilla. Fold into dry ingredients. Fold in coconut and nuts.
Put batter into loaf pan and bake 55 minutes.
