Stir-fried Beef and Broccoli: Date Added: 12 Jun 2013

2 tsp soy sauce
1/4 tsp sugar
1/4 tsp salt
3/4 lb boneless sirloin, cut across grain to 1/4 inch thick

1 tbsp corn starch
1 tbsp soy sauce
1 tbsp medium-dry sherry
1/4 cup chicken broth
1 tsp sugar
2 tsp oriental sesame oil

3 tbsp vegetable oil
1 tbsp minced fresh ginger
1 tbsp minced garlic
1 fresh red chili seeded and minced
1 lb broccoli cut in to flowerets and stems peeled and cut into 1/2 inch thick chunks

Cooking Instructions

In a small bowl stir together ingredients for beef, allow beef to marinate for at least 20 minutes (prefer over night
In a small bowl mix together ingredients for sauce
Heat wok with 2 tbsp oil
Fry beef in small batches
Add remaining oil and fry ginger, garlic, and chili for about 30 seconds
Add broccoli and fry for 1 minute
Add 1/3 cup water and steam broccoli for 2 minutes
Stir and add sauce and beef and allow to cook until beef heated through and sauce thickened
Serve over rice
