Potato Salad with Sausage and Mustard Dressing: Date Added: 18 Jun 2013

1 lb small red potatoes
1 lb small yellow potatoes
3 tbsp cider vinegar
1 tbsp plus 1/2 tsp kosher salt
1/4 cup coarse grain mustard
3 tbsp cider vinegar
3 tbsp sugar
1/4 cup vegetable oil
1/2 cup dry cured sausage (pepperoni, etc.)
1/2 cup torn fresh cut parsley
2 tbsp thin sliced green onion

Cooking Instructions

In a 3 to 4 quart sauce pan combine potatoes (halved), 3 tbsp cider vinegar, 1 tbsp kosher salt and enough water to cover potatoes. Bring to a boil, reduce heat, and simmer uncovered for 15 to 20 minutes. Drain and let cool before dressing.

Mix grainy mustard, 3 tbsp cider vinegar, sugar, kosher salt in a bowl. Wisk in oil until blended and creamy.

Mix dressing into potatoes. Season with salt and pepper. Gently mix in diced sausage and parsley, garnish with green onion.
