3 cups self-rising flour
3 tablespoons sugar
12 ounces beer, room temperature (not light beer)
Butter for pan and topping
Preheat oven to 375. Combine flour and sugar in a mixing bowl. Add beer. Mix well with large spoon; batter should be slightly sticky. Place in a greased loaf pan and bake for 50-60 minutes. Brush with melted butter.
Add 1/2 cup chopped scallions, 1/2 cup shredded cheddar cheese and 1 1/2 teaspoons poultry seasoning.
